The Ultimate Waffles and Ice Cream

So for my brothers 'back to college' breakfast, my Mom and I made waffles and ice cream. My brother decided to take it up a notch though and created this master piece.

Waffles, bacon, ice cream, whipped cream, chocolate sauce, and berries.

For my Mom and myself, we made gluten-free waffles which turned out great! I'll post the recipe soon.

Matcha Green Tea Ice Cream Recipe

Yesterday, I made this delicious green tea ice cream! I've been dying to make this for the longest time but had to put it off until I purchased some matcha powder (that stuff is expensive!). The ice cream turned out so perfect. It was creamy and had the perfect sweetness. Next time I make it, I think I'll try using coconut milk in place of the whole milk.


Green Tea Ice Cream 

3/4 cup whole milk
2 egg yolks
5 Tbsp of sugar
3/4 cup heavy cream (I added just a little extra)
1 Tbsp matcha green tea powder
3 Tbsp hot water

1) Mix the matcha powder and hot water in a small bowl and set aside.

2) Whisk the egg yolks and sugar together in a sauce pan until completely combined. Gradually add the whole milk to the egg and sugar while whisking. Set pan on low heat and continue to stir constantly until mixture thickens

5) Soak the bottom of the pan in an ice bath and allow the mixture to cool. Add the green tea to the cooled mixture and stir. Then add the heavy cream and stir until fully combined.

8) Place the mixture in the fridge over night (or for a few hours). Once it's nice and chilled, place mixture in an ice cream maker (or freeze it if you don't have an ice cream maker)

This only filled up half of my ice cream maker so if you plan on serving it to more than three people, I would suggest doubling the recipe.

Iced Coffee

In this 103 degree weather, I feel like iced coffee is a necessity. It gives me my boast for the day without making me way too hot! Plus I love an excuse to eat whipped cream ;) Some people tend to add more sugar to their iced coffee then they would their hot coffee. I don't like the extra calories of adding sugar so I drink my iced coffee strait up with only milk and coffee.


Simple Iced Coffee


The day before you want to enjoy your drink....

1) make your usual cup of coffee
2) stick 3/4 of the coffee in the fridge
3) take the left over coffee and make coffee ice cubes

The next day...

1) fill 1/2 of you cup up with coffee
2) add coffee ice cubes
3 fill the rest of the cup up with milk (I use unsweetened almond milk)
3) top with whipped cream
2) Enjoy!

Iced Mocha Punch

To celebrate the Fourth of July, we had a fabulous pool party this morning! As you probably know by now, I'm known for making coffee drinks and desserts whenever company comes over. Today, I made this delicious ice mocha punch. This punch was perfect to chill everyone down after sitting out in the 100 degree weather. I think it was a hit!

After making this iced mocha punch today, I'm already excited to make it again. It's the perfect drink for parties on hot days and coffee lovers are bound to enjoy it!


Iced Mocha Punch
9 cups of milk
5 cups of coffee
1 cup of sugar
6 heaping Tablespoons of cocoa powder
2 or 3 Tablespoons of vanilla
a pinch of salt

1) Heat up the milk, 3/4 cup sugar, the cocoa powder, the salt, and the vanilla in a large pot on the stove
2) Stir on medium heat until everything is dissolved in the milk
3) Pour most of the milk mixture (it should be just like hot chocolate) into a pitcher and stick in the fridge
4) Pour the rest of the milk mixture into an ice cube tray and stick it in the freezer
5) Make 5 cups of hot coffee and stir in 1/4 cup of sugar (the rest of the sugar) until it dissolves in the coffee
6) Pour most of the coffee into a pitcher and stick it in the fridge
7) Pour the rest of the coffee into 1 or 2 ice cube trays and stick them in the freezer
8) Let everything chill/freeze overnight
9) Pour the chilled milk mixture, the chilled coffee, and the ice cubes into the punch bowl and stir well
10) Enjoy! 

Oh, and I like to top mine off with some whipped cream!
