Flourless Banana Peanut Butter Muffins

Frozen Chocolate Banana
Here's one of my favorite summer treats! My cousin and I came up with the great idea of covering frozen bananas in chocolate and peanut butter. It's the perfect frozen treat and can be made in minutes. It's probably better for you then pigging out on ice cream sandwiches in the summer. I use all natural, low sugar peanut butter and dark chocolate to make it as healthy as I can.

Chocolate Peanut Butter Smoothie
I hate it when we are completely out of chocolate and I can't find any in our house. Typically we always have cocoa powder though. On a day when we had no chocolate, I came up with this wonderful smoothie. So here's the recipe to my smoothie of the day!
Chocolate Peanut Butter Smoothie
1 frozen banana (sometimes I add another half banana if the smoothie isn't thick enough)
A handful of ice
1/2 cup of almond milk (use more if it doesn't blend)
1 Tablespoon vanilla protein powder
1 Tablespoon cocoa powder
1 Tablespoon maple syrup (optional)
2 spoonfuls of plain or vanilla yogurt (I use greek or homemade yogurt)
2 spoonfuls of peanut butter

Peanut Butter Chocolate Shake
Today I made an amazing peanut butter chocolate shake. It turned out delicious so I'll share the recipe with you.
Peanut Butter Chocolate Shake
1 frozen chopped up banana
1/3 cup of vanilla yogurt
1/2 teaspoon of vanilla
1 or 2 scoops of ice cream
1/4 cup of creamy peanut butter
1/2 Tablespoon of cocoa powder
1/3 cup of milk (you can add more or less depending on how thick you want it)
1/4 cup of chilled coffee (optional)
Put all these ingredients into your blender and blend. Then pour into a cup, add some whipped cream, and enjoy! This recipe makes enough for about one serving. If you would like to make this healthier, you can replace the ice cream with just ice. I also used almond milk and added some maple syrup to make mine sweeter.

National Peanut Butter Day
Happy National Peanut Butter Day! Peanut butter is easily one of my favorite foods. I've been accused more than once of being a peanut butter addict. I often eat it straight out of the jar by the spoonfuls! When I found out that today was National Peanut Butter Day, I quickly changed my schedule in order to make some delicious peanut butter treats.
For lunch I made Peanut Butter Pad Thai. This amazing noodle dish is the perfect combination of sweet and spicy. My mom and I have perfected this recipe after a few tries and it has been one of my favorite dishes since! If you are interested in the recipe, I plan on including it in a blog post soon. So check back in a week or so.
This afternoon, I decided to make peanut butter cookies! These peanut butter cookies are gluten free and are great if you need a semi-healthy sweet treat.
Peanut Butter Chocolate Chip Cookies
1 cup of peanut butter
1/2 cup brown sugar (or more, depending on your sweet tooth!)
1/4 cup honey
1 egg
1 teaspoon of vanilla
1/4 cup of chocolate chips (or more if you like)
Set the oven to 350 degrees and stir all these ingredients together in a bowl. Bake the cookies for 9 to 10 minutes. Let the cookies cool for a few minutes and then enjoy!

Peanut Butter Caramel Mocha
I have really enjoyed making mochas this winter season! A while back I was making a mocha when I decided to add peanut butter. I really love peanut butter. The drink turned out to be the best mocha I've made thus far! Ever since I've added peanut butter to all of my mochas and they are delicious! If you aren't the biggest peanut butter fan, you can skip adding the peanut butter and simply add more caramel if you like. Here's the recipe!
For one person:
about 2 cups of milk
1/2 cup of coffee (or more if you'd like!)
2 Tablespoons of sugar
1 Tablespoon of cocoa powder
1 Tablespoon of caramel
1 Tablespoon of peanut butter (you can kinda guess with this and add more or less)
1/2 Tablespoon of vanilla
pinch of salt
Put the milk in a pot on medium heat. stir until hot. add the rest of the ingredients, stirring in each before adding the next. once all the ingredients are added, make sure you stir some more for a few minutes. then enjoy!
