Avocado Spring Rolls

After discovering some spring roll skins in our pantry, I knew I just had to make some avocado spring rolls. They are just so fresh and healthy. It's amazing how the simplest ingredients can create such a beautiful taste. Here's how I made this simple meal.










You can add whatever veggies you want and sometimes I like to add shrimp. For my dipping sauce, I used my pad thai sauce recipe which you can find here: Thai Peanut Sauce
The sweet and spicy peanut sauce goes perfect with the fresh spring rolls.
