National Peanut Butter Day

Happy National Peanut Butter Day! Peanut butter is easily one of my favorite foods. I've been accused more than once of being a peanut butter addict. I often eat it straight out of the jar by the spoonfuls! When I found out that today was National Peanut Butter Day, I quickly changed my schedule in order to make some delicious peanut butter treats.

For lunch I made Peanut Butter Pad Thai. This amazing noodle dish is the perfect combination of sweet and spicy. My mom and I have perfected this recipe after a few tries and it has been one of my favorite dishes since! If you are interested in the recipe, I plan on including it in a blog post soon. This afternoon, I decided to make peanut butter cookies! These peanut butter cookies are gluten free and are great if you need a semi-healthy sweet treat.

Peanut Butter Chocolate Chip Cookies


1 cup of peanut butter
1/2 cup brown sugar (or more, depending on your sweet tooth!)
1/4 cup honey
1 egg
1 teaspoon of vanilla
1/4 cup of chocolate chips (or more if you like)

Set the oven to 350 degrees and stir all these ingredients together in a bowl. Bake the cookies for 9 to 10 minutes. Let the cookies cool for a few minutes and then enjoy!
